This study was carried out to evaluate some quality aspects such as lipid deterioration on Vacuum Packed (VP) brined golden mullet Liza aurata during 90 days of storage at 4andordm;C. Peroxide Value (PV) and thiobarbituric acid (TBA) were analysed to determine lipid deterioration at intervals of 0, 30, 60 and 90 days.The data was analyzed by Tukey test and ANOVA. Increasing in PV and TBA were found to be statistically significant in the VP brined golden mullet through out storage (Pandlt;0.05). This study showed that lipid deterioration can be considered as one of the chemical assessment to determine the shelf life of VP brined golden mullet during storage.Based on data the best shelf life was found 30 days for VP brined golden mullet stored at 4andordm;C.
